CHESTNUT DRESSING 
1 lb. boiled chestnuts
1/4 c. melted chicken fat
1/4 tsp. pepper
3/4 tsp. salt
1 c. grated bread crumbs
Soup stock or water (to moisten crumbs)
Parsley flakes

Shell and blanch chestnuts. Add remaining ingredients. Put in 9 inch casserole. Cover with foil. Bake at 350 degrees for 45 minutes.
