CILANTRO PESTO 
2 c. fresh cilantro leaves
4 tbsp. fresh lime juice
2 tbsp. water
2 tbsp. grated Parmesan cheese
2 cloves garlic, sliced
1 tsp. sugar
1/4 tsp. salt
1/4 tsp. freshly ground black pepper

In a blender, combine cilantro (leaves only), lime juice, water, Parmesan, garlic, salt and pepper. Puree until smooth. Wonderful served over grilled or broiled salmon (1-inch thick, broiled 5 to 7 minutes, turned once). Serve with baguette slices dusted on both sides with cumin and heated until warm. A very LOW FAT meal!
