ITALIAN ZUCCHINI CRESCENT PIE 
Cook and stir 4 cups thinly sliced zucchini and 1 cup chopped onion in 1/4 - 1/2 cup butter for 10 minutes.

1/2 c. chopped parsley or 2 tbsp. flakes
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. basil
1/4 tsp. oregano

Combine 2 beaten eggs and 8 oz.(2 cups) shredded Mozzarella cheese. Stir in zucchini mixture. Separate 8 oz. package crescent rolls. Place in ungreased pie pan. Press over bottom and up sides to form crust. Bake at 375 degrees for 5 minutes. Remove from oven. Add filling and return to oven for 18-20 minutes or until center is set. 6 servings.

Variation: Spread mustard on crust.
