BROCCOLI CASSEROLE 
1 head broccoli
1/2 c. cream of mushroom soup
1/4 c. mayonnaise
1 tbsp. onion flakes or 1/2 small onion, chopped fine
1/2 c. grated Cheddar cheese
1 sleeve Ritz crackers, crushed
1 stick butter

Cut broccoli into 1-inch pieces and steam. Mix next 4 ingredients and combine with cooked broccoli. Put into greased 1 1/2 or 2-quart casserole. Melt butter and mix in crushed Ritz crackers; spread mixture over top of casserole.

Bake at 350°F, covered, for 15 minutes, then uncovered for 15 minutes.
