NONFAT PASTA MEXICANA 
2 pkgs. rotelli pasta noodles: semolina flour, spinach, tomato mix
2 cans Mexican style stewed tomatoes
10 scallions or 1 leek (found in produce section)
1/2 to 1 c. baby shrimp
1 tbsp. dried cilantro
1 tbsp. dried parsley
1 tbsp. Parmesan cheese (optional)
1 sprinkle garlic powder or garlic salt
1/2 tsp. pepper (add more, if desired)

Bring water with sliced scallions and/or leek to a boil. Add pasta and cook al dente. Drain and rinse. Add stewed tomatoes. Add all seasonings. May serve warm or cold.

High complex carbohydrate, low-non fat. High Vitamin C. Supplemental source of protein. To increase protein content, add kidney beans, garbanzo or black-eyed peas for complimentary protein effect.
