ZUCCHINI JAM 
6 c. grated zucchini, peeled
4 c. sugar
1/2 c. lemon juice
1 sm. can crushed pineapple
2 sm. pkgs. apricot Jello

Cook grated zucchini 6 minutes. Add sugar and cook 6 minutes more. Add lemon juice and crushed pineapple and cook 6 minutes more. Take off stove. Stir in Jello and pour into prepared jars.
