CHOCOLATE ECLAIR 
1 box graham crackers
2 sm. pkgs. vanilla pudding
3 c. milk
1 (8 oz.) non-diary frozen whipped topping
1 (8 oz.) semi-sweet choc. morsels
1 tbsp. butter
2 tbsp. milk
1 c. confectioner's sugar

Line large Pyrex baking dish with graham crackers. Do not crumble. Mix 2 small packages of instant vanilla pudding mix and 3 cups of cold milk. Beat until mixture thickens and then add 1 (8 oz.) container of non-dairy frozen whipped topping. Mix well. Spoon half of mixture onto graham crackers. Add more graham crackers. Add remaining mixture and top with graham crackers. Final topping, use 8 oz. of semi-sweet chocolate morsels, butter, milk, and confectioner's sugar. Melt morsels and butter in saucepan. Add milk and sugar, beat until smooth. Spread over entire mixture. Store in refrigerator 24 hours before eating.
