ENGLISH MUFFINS 
3 c. flour
1 1/2 c. warm water
1/4 c. warm milk
1 pkg. yeast
2 tsp. salt
1/2 tsp. baking soda

Blend flour, yeast, warm water; beat batter until smooth. Cover and let rise. Stir in soda and milk. This makes a runny batter. Cover again and let rise until bubbly.

Heat a griddle; grease. If rings used, grease rings and place on griddle. Pour about 2 tablespoons batter in each ring. Bake until bubbles form on top and begin to break. Remove ring and turn muffins to cook 2-3 minutes more. Remove to clean cloth. Keep warm until served.

Rings can be made from short-sided cans like tuna. I prefer to make the muffins without rings - it seems to work just as well and is less of a fiddle.
