SOFT GINGER COOKIES 
1/2 c. sugar
1 tbsp. ginger
2 tsp. baking soda
3-4 c. flour
1/2 tsp. salt
3/4 tsp. cinnamon
1/8 tsp. nutmeg
1/2 c. shortening
1 tbsp. vinegar
1/2 c. boiling water
1 c. molasses
1 egg

Cream shortening and sugar; add egg. Beat until light. Add molasses and vinegar, then sift dry ingredients. Add soda last after dissolving in hot water. Use more flour if needed to make soft dough. Let stand overnight in refrigerator. When chilled, flour hands and break off piece and roll in small ball. Pat out, not too thin. Sprinkle with sugar. Bake at 350 degrees for 8 to 10 minutes. Makes 50 plump, soft cookies.
