ORANGE RICE 
1/2 c. butter
2 c. celery, sliced diagonally
1 med. onion
3 c. water
2 c. orange juice
3 tbsp. grated orange rind
2 1/2 tsp. salt
2 c. uncooked rice
1 orange, peeled and sectioned

Melt butter; saute celery and onion. Add water, juice, rind, salt, and rice. Stir; cover and cook 25-30 minutes. Serve with orange sections on top. Great with barbecue chicken.
