MINTY PEAR SALAD 
1 (6 oz.) pkg. lime Jello
2 c. boiling water
1 (1 lb.) can pears, chopped
1/4 tsp. mint extract
1 (8 oz.) carton Cool Whip

Dissolve Jello in boiling water. Drain pears, measuring syrup and adding water to make 1 3/4 cups. Stir syrup and mint extract into Jello. Chill until slightly thickened. Gently fold Cool Whip and the chopped pears into the Jello, blending thoroughly. Pour into a 9x13 inch pan or into individual molds and chill until firm.
