EASY HOMEMADE ROLLS 
4 c. sifted flour
2 pkg. (2 tbsp.) yeast
1 1/2 c. warm water
1/4 c. sugar
1 1/2 tsp. salt, optional
1 egg
1/3 c. vegetable shortening

In large bowl sprinkle dry yeast into warm water. Allow to sit and dissolve for a few minutes, then stir. Add 2 cups flour, sugar, salt, shortening and egg. Blend at low speed with mixer, then at medium speed for 1 1/2 to 2 minutes. Fold in remaining 2 cups flour by hand. Cover. Let rise until double (30 minutes). Stir down.

Spoon into greased muffin tin 1/2 full. Allow to rise to top of cup (20-30 minutes). Bake at 400 degrees for 10 minutes. Makes 12-15 rolls.

This recipe is very quick and easy. It makes rolls you would think took a day to make. I spread a little melted butter on top of each before baking. Great recipe for anyone who wants fast and tasty yeast rolls.
