HEART SMART BAKED CHICKEN 
3 boned and trimmed chicken breasts
1 c. uncooked oatmeal
1/3 c. grated Parmesan cheese
1/2 tsp. salt
1/2 tsp. paprika
1/8 tsp. pepper
1 clove garlic, pressed
1/3 c. milk
1/4 c. melted butter

Press in food processor until mixed the oatmeal, Parmesan cheese, salt, paprika, pepper. Mix garlic and milk together in bowl. Place chicken one piece at a time in oatmeal mixture, then dip in milk, and again in oatmeal. Place in shallow baking dish. Drizzle with butter. Bake at 375 degrees about 25 to 30 minutes. Garnish with parsley. Serves 6.
