CHICKEN PICCATA 
1 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
4 sm. chicken breast boned
4 tbsp. butter, separated
1/4 c. dry white wine
3 tbsp. chopped parsley
Lemon slices

Coat chicken in flour. In pan, melt butter and 2 tablespoons brown chicken on both sides 4 minutes per side. Put into warm platter. In pan melt 2 tablespoons butter. Stir in wine, lemon juice, and lemon (1) sliced, scrap pan. Stir in parsley simmer 5 minutes. Spoon over chicken and serve.
