BAKED ZUCCHINI 
3 c. zucchini, sliced thinly or grated (take seeds out if zucchini are large)
1 c. Bisquick mix
1/2 c. onion, chopped (optional)
1/2 c. Parmesan cheese
2 tbsp. parsley
1/2 tsp. salt
Dash pepper
1/2 c. oil
8 oz. mozzarella, shredded
4 eggs, slightly beaten

Mix all together, put into greased square pan. Bake at 350 degrees until brown about 30 to 40 minutes or until toothpick comes out clean.
