MINCE MEAT FILLING FOR PIES 
4 lbs. boiled beef, lean, chopped fine
8 lbs. tart green apples
1 lb. suet, chopped
3 lbs. seedless raisins
2 lbs. currants, picked over, wash & drained
1/2 lb. citron, cut up fine
1 lb. brown sugar
1 qt. cooking molasses
2 qt. sweet cider
1 pt. boiled cider
1 tbsp. salt
1 tbsp. black pepper
1 tbsp. mace
1 tbsp. allspice
4 tbsp. cinnamon
2 nutmeg, grated
1 tbsp. cloves
1 pt. brandy
1 pt. Madeira wine

Mix the above ingredients together thoroughly. Warm it on the range until heated through.. Remove from fat. When nearly cool, stir in a pint of good brandy and a pint of Madeira wine. Pour into a crock, cover it tightly and set in a cold place where it will keep good all winter.
