APPLE BRAN MUFFINS 
1 c. all-purpose flour
1 c. whole wheat flour
1/3 c. wheat germ or bran
1/4 c. firmly packed brown sugar
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
2 eggs, beaten
1/4 c. skim milk
1/4 c. oil
2 c. shredded apple
Raisins (optional)
Nuts to taste

Combine first 9 ingredients in a large bowl. Make a well in center of mix. Combine eggs, milk and oil. Add to dry ingredients. Stir just to moisten. Stir in apple. Spoon into muffin pans coated with cooking spray. Bake at 400 degrees for 10 to 12 minutes.
