CAPON WITH APRICOT SAUCE 
2 capons
3 tbsp. honey
1 can apricot halves
3 tsp. cornstarch
1 tbsp. butter
Juice of 1 lemon
2/3 tbsp. apricot brandy
Salt and pepper

Season the capons with salt and pepper and roast in oven preheated to 350 degrees for 1 hour. Spread honey on and roast for 40 minutes. Mix apricot juice, lemon juice, and water to make about 1 cup liquid.

Blend cornstarch and cook until smooth, thickened and clear. Add butter. Just before serving, add apricot halves and apricot brandy to sauce and heat but do not boil. Serve the capon with sauce poured over it.
