THIMBLE COOKIES | |
2 c. all-purpose flour 1 1/2 c. pecans 1 c. butter, softened 1/4 c. granulated sugar 1/4 c. firmly packed brown sugar Combine the flour and pecans in a blender or food processor. Process until pecans are very fine. In medium mixing bowl, beat butter and sugars until light and fluffy. Stir in flour mixture. Wrap dough in plastic wrap and refrigerate overnight. Preheat oven to 300°F. On a lightly floured surface, use a floured rolling pin to roll out dough to 1/4-inch thickness. Cut out dough using a thimble. Place on foil-lined baking sheet and bake 10 to 12 minutes or until very lightly browned. Makes about 50 dozen cookies. |
