BUTTERSCOTCH CAKE | |
2/3 c. Nestle's butterscotch morsels 1/4 c. water 1 tsp. salt 1 tsp. baking soda 1/2 c. shortening 1 c. buttermilk 2 1/2 c. flour 1/2 tsp. baking powder 1 1/4 c. sugar 3 whole eggs, unbeaten FILLING: 1/2 c. sugar 1 tbsp. cornstarch 1/2 c. evaporated milk 1/3 c. water 1/3 c. butterscotch morsels 1 egg yolk, beaten 2 tbsp. butter 1 c. coconut 1 c. pecans Melt butterscotch in water and cool. Sift flour with other dry ingredients; set aside. Cream shortening and sugar, then blend in eggs. Add butterscotch. Add dry ingredients and buttermilk. Bake at 375 degrees until tester comes out clean. FILLING: Combine first six ingredients. Cook over medium heat until thick. Remove from heat. Add butter, coconut, pecans. Cool and spread between layers. Frost sides and 1" rim on top with fluffy white frosting. |
