GRAPE JELLY | |
3 1/2 lb. concord grapes 1 1/2 c. water 7 c. sugar 1 box (1 3/4 oz.) pectin Prepare jars, lids and bands. Remove stems and crush in small amounts. Place in large saucepan. Add water. Bring to a full boil. Cover and simmer for 10 minutes, stirring occasionally. In another large bowl, strain grapes for about 4 hours through cheesecloth. When juice is extracted, measure 5 cups and place in large saucepan. Add a box (1 3/4 ounce) of pectin and 1/2 teaspoon butter to juice. Bring mixture to a full rolling boil, stirring constantly. Quickly add sugar and return to a full boil, stirring constantly. Boil for 1 minute, stirring constantly. Remove from heat and skim off any foam. Fill jars immediately and cover to seal. Turn jars upside down for 5 minutes then turn back upright. Check to be sure jars have sealed. |
