Soup bone
2 c. grated potatoes
1 1/2 c. flour
Salt pork or bacon

Boil soup bone 1 hour. Mix potatoes and flour to make dumpling mixture; cut salt pork into cubes. Spoon up a large tablespoon of dumpling mixture, insert cube of pork inside. Drop in boiling soup stock. Cook 1 hour. Serve with butter. Onion and/or carrots may be added to soup stock. Leftovers may be fried in bacon fat next morning.
