O'NITE LAYERED CHICKEN SALAD 
6 c. shredded iceberg lettuce
1/4 lb. bean sprouts
1 (8 oz.) can water chestnuts, sliced
1/2 c. green onions, thinly sliced
1 med. size cucumber, sliced paper thin
4 c. chicken, cooked - either cubes or strips
2 pkgs. frozen pea pods, thawed only

Layer in order in a 4 quart dish, pea pods on top. Spread dressing over all.

DRESSING:

2 c. mayonnaise
2 tsp. curry
1 tbsp. sugar
1/2 tsp. ground ginger

Cover and refrigerate overnight. Garnish with Spanish peanuts and cherry tomatoes. Serves approximately 12.
