TURKEY STUFFED POTATO 
2 lg. potatoes, baked & cooled
2/3 c. plain low fat yogurt
2/3 c. low fat cottage cheese
1/2 c. Parmesan cheese
1/2 c. finely chopped onion
1/4 tsp. pepper
1 tbsp. tamari soy sauce
1/2 tsp. dried dill weed
2 c. cubed, cooked turkey (white meat)
Paprika

1. Cut each potato in 1/2 and scoop out centers, leaving 1/4" shell.

2. Place potato and rest of ingredients (except turkey and paprika) in bowl. Mix until smooth with electric beater.

3. Fold in turkey. Preheat oven to 350 degrees.

4. Fill potato shell with mixture. Sprinkle tops with paprika. Place in a baking dish.

5. Bake 25 to 30 minutes or until lightly browned on top. Serves 4.
