WHITE BUTTERMILK CAKE 
2 1/4 c. sifted cake flour
1 1/2 c. sugar
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder

Sift together dry ingredients into large mixer bowl. Add 1/4 cup butter or vegetable shortening, 1 1/2 teaspoons vanilla, 3/4 cup buttermilk. Beat 2 minutes at medium speed. Add 1/4 cup more buttermilk and 4 egg whites and beat 2 minutes longer. Bake at 350 degrees for 30-35 minutes.
