PICANTE SAUCE 
4 qts. ripe tomatoes (approximately 24 lg. ones)
2 c. chopped onions
2 c. hot peppers, chopped
1 c. sugar
3 tbsp. salt
2 1/2 c. vinegar

Combine tomatoes, onions, peppers, sugar and salt in a large pot. Boil gently for 45 minutes, stirring occasionally. As mixture thickens, add vinegar and cook slowly uuntil mixture thickens. Add vinegar and cook slowly u ntil mixture thickens to desired thickness, about one hour longer. Seal in hot sterile jars.
