SUMMER BROCCOLI SALAD 
1 1/2 lbs. fresh broccoli
1 c. mayonnaise
2 tsp. sugar
1 tbsp. vinegar
2 tbsp. bacon bits
1/2 c. shredded cheddar cheese

Cut up broccoli into flowerets. Blanch broccoli for 3 to 4 minutes; drain and set aside. Prepare dressing of mayonnaise, sugar and vinegar. Pour over broccoli flowerets. Add bacon bits and shredded cheddar cheese. Toss to coat. Makes 4 to 6 servings. Even the kids will eat their broccoli this way!
