ITALIAN TOAST COOKIES 
6 eggs
1 1/4 c. sugar
1 c. almonds
4 tsp. baking powder
6 c. flour
2 tbsp. anise (or 1 tbsp. anise/1 tbsp. vanilla)
1 c. oil
1 tsp. baking soda

Beat eggs, add anise, sugar and oil. Mix well. Add flour with baking powder and soda and mix well. Put on floured board, form into rolls and flatten them out on a cookie sheet. Bake 20 minutes at 350 degrees. Then cut into strips and toast in oven until slightly brown (approximately 5 minutes). Be sure oven is not too hot. If you have time, it's best to chill the dough for several hours; this makes the dough much easier to handle.
