TACO CASSEROLE 
1 1/2 lb. ground beef
1 onion
1 pkg. chili mix
Salt and pepper to taste
1 lg. can diced tomatoes
1 (7 oz.) pkg. yellow rice
1 can Cheddar cheese soup
1 c. shredded cheese
1 c. milk
1 c. each lettuce and tomatoes

Prepare rice. Cook onions with beef and drain. Add chili mix, diced tomatoes, salt and pepper. Add Cheddar cheese soup to milk and microwave 3 minutes. You can add rice to beef mix or layer. Then cover with crumbled nachos, fresh tomatoes, lettuce and shredded cheese. Pour in 16 x 20 pan.

Since microwave ovens vary in power, you may need to adjust your cooking time.
