POLYNESIAN WEDDING CAKE 
1 1/4 c. oil
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
2 tsp. vanilla
1 c. drained crushed pineapple
2 c. sugar
3 eggs
1 tsp. salt
2 c. shredded carrots
1 c. chopped nuts
1 c. coconut

Combine all the above ingredients together in a large bowl. Stir by hand, do not use an electric mixer. Pour into a 9x13 inch Pyrex dish. Bake at 350 degrees for 50 minutes. Let cool. Frost with a cream cheese frosting.

CREAM CHEESE FROSTING:

8 oz. softened cream cheese
1/2 stick softened butter
2 tsp. vanilla
1/2 box confectioners' sugar

Mix all together on low speed with electric mixer.
