STIR - FRY VEGETABLES 
1 clove garlic
Green bell pepper
Red and/or yellow bell pepper
Green onion
Zucchini squash
Summer squash
Snow peas
Cauliflower
Broccoli
Tomato
Mushr ooms
Water chestnuts
Carrots
Celery
Bean sprouts
2-3 tbsp. vegetable oil
1-3 tsp. soy sauce, optional
Sesame oil, optional

Cut any combination of the above vegetables into small pieces, strips, etc. Choose a variety of vegetables to give the best texture and color combination. Use amounts based on your preference and number of servings.

Heat the oil until very hot. Saute minced garlic. Stir fry the vegetables until they are hot through, but still quite crisp. Start with the tough vegetables like carrots and celery and gradually add the others, ending with the delicate vegetables like mushrooms and tomatoes. Season to taste with soy sauce. Sprinkle vegetables with sesame oil to add flavor and sheen. Serve immediately.
