WILTED SPINACH SALAD 
1 pkg. fresh spinach
6 slices of bacon
3 hard boiled eggs, chopped
3 tbsp. bacon grease
3 tbsp. white vinegar
3 tbsp. white sugar
3 tsp. dijon mustard

Cook bacon and reserve grease. Mix grease with vinegar, sugar and mustard and cook over medium heat stirring until slightly thickened. Lower heat and keep warm until ready to mix with spinach.

Wash spinach and stem it. Crumble bacon and dice eggs and add to spinach. At moment of serving pour hot sauce and toss. Add mushrooms if desired.
