FUNNEL CAKES 
6 c. oil
3 c. flour
1/4 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
3 eggs
2 c. milk
1 tsp. vanilla
Powdered sugar

Pour oil into deep fat fryer. Set at 425 degrees. Preheat 25 minutes.

Sift together flour, sugar, baking powder and salt. Set aside. Beat eggs until thick and lemon colored. Add milk and vanilla extract, then beat in sifted dry ingredients until batter is smooth.

Holding opening covered with finger, pour 1/4 cup batter into wide-mouth funnel (about 1/2 inch in diameter). When ready to fry, release finger and run batter into hot oil using a slow wide circular motion. Fry, turning once until brown. Drain on paper towels. Sprinkle with powdered sugar.
