STUFFED ZUCCHINI 
2 lg. zucchini
1 c. cooked rice
1 sm. can tomato sauce (or 1 c. Ragu spaghetti sauce)
1 sm. onion, diced
1 lb. ground beef
Grated Mozzarella cheese
Grated Parmesan cheese

Slice zucchini lengthwise and scoop out seeds. Place in shallow baking dish. Brown ground beef and onion and drain; add cooked rice to ground beef mixture and stir in just enough tomato sauce to make ground beef mixture moist. Tightly pack ground beef mixture into scooped out zucchini. Pour remaining tomato sauce on top. Sprinkle Mozzarella and Parmesan cheese on top and bake covered at 350 degrees for 45 minutes.
