FROZEN PEANUT BUTTER CHEESE
DESSERT
 
Mix together and pat into 9 x 13 pan:

1/2 c. vegetable oil butter, melted
1 c. (equivalent) brown sugar substitute
2 tsp. pumpkin pie spice
2 tsp. vanilla
3 c. uncooked oatmeal

Cook in microwave for 3 to 4 minutes on HIGH. Cool.

FILLING:

Mix together until dissolved:

1 pkg. unflavored gelatin
1 c. boiling water
1 c. (equivalent) brown sugar substitute
2 tsp. vanilla

Put into blender and add:

1 c. peanut butter
1 (24 oz.) carton low-fat cottage cheese

Blend until smooth. Pour over oatmeal mixture. Freeze until approximately 5 minutes before serving. Serves 8 at approximately 360 calories per serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
