PAT'S BRAN MUFFINS 
2 c. 100% Bran (Nabisco)
1 1/2 c. milk (low fat)
1 egg, slightly beaten
1/4 c. oil
1 c. all-purpose flour
1/2 c. walnut pieces (more if desired)
Handful of blueberries
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda

Combine bran and milk; let stand 5 minutes. Stir in egg and oil. In large bowl, combine flour, walnut pieces, sugar, baking powder, and baking soda. Stir in bran mixture until just blended. You may use both blueberries and walnuts or one or the other.

Put in blueberries. Mix lightly. Fill greased muffin pan cups 3/4 full. Bake at 400 degrees for 25 minutes. Remove and cool on wire rack.
