Pare and slice: Cook until ... cover. Add: Drain the eggplant. Mash it. Beat in: Drop the batter from a spoon into deep fat heated to 365 degrees.

Peel eggplant and cut into finger sized ... into batter. Deep fry in hot oil, 375 degrees, until golden brown. Drain on layers of paper towels.

Mix all ingredients together and make small patties and fry in oil.

Put into muffin pan, filling about 1/2 full. Bake at 425 degrees until done.



Peel and dice eggplant. Boil in 4 quart ... should be thick and stay together when dropped in oil. If not, add more flour. Fry until golden brown.

Boil eggplants, cubed, in salty water ... add enough flour to make batter hold its shape. Drop batter from spoon into hot oil. Fry until brown.

With electric mixer put eggplant into batter and mix well. Drop by tablespoon into deep fryer. Cook until light brown. Drain.

Mix all ingredients. Fry in deep fat until golden brown. Serve hot with butter or applesauce.

Peel and cube eggplant. Cook in boiling salted ... flour (consistency depends on size of egg and how well eggplant was drained.) Yield: 18 to 20.
