11. MY DAD'S RAW POTATO PANCAKES

Place a handful of potatoes ... and oil as you would fry pancakes. Best if fried until crisp on both sides. Serve with sour cream or applesauce.

Beat eggs with hand beater ... size). Batter will form bubbles on top. When almost all bubbles have opened, turn pancakes. Cook until golden brown.

Grate potatoes; add eggs and crushed crackers; mix. Fry on hot griddle until brown on both sides. My dad found this recipe in Herter's cookbook.

Mix thoroughly. Ladle onto hot griddle. Very thin - like crepes.
