SPINACH POP PIE 
2 beaten eggs or low cal Egg Beaters
6 tbsp. flour
1 (10 oz.) pkg. frozen chopped spinach, thawed
1 1/2 c. cottage cheese
1 to 1 1/2 c. grated cheddar cheese
1/2 tsp. salt

Can use Weight Watchers or any low fat cheese.

Preheat oven to 350 degrees.

Grease a 1 1/2 quart casserole dish. In mixing bowl, beat eggs with flour until smooth. Squeeze moisture out of spinach. Add spinach, cottage cheese, cheddar cheese and salt to mixture. Stir to blend. Spoon mixture into prepared dish. Bake 1 hour and enjoy.
