BEST POTATO SALAD 
3 lb. potatoes
8 boiled eggs
2 tbsp. vinegar
1 lg. onion, chopped (optional)
Chopped pickles (optional)
2 tbsp. oil
1 tsp. mustard
1/2 c. mayonnaise
1/2 bell pepper
1/2 c. chopped celery

Peel and cube potatoes, boil in salt water. Drain and cool. Separate egg yolks, chop whites. In small bowl mash egg yolks, vinegar, oil, mayonnaise and mustard. Blend well and pour over potatoes. Add pepper, onions, celery, pickles and egg whites. Salt, pepper and sprinkle with parsley.
