CREAM OF WATERCRESS SOUP | |
1 bunch watercress 4 tbsp. butter 1 onion, finely chopped 2 garlic cloves, finely chopped Natures Seasoning to taste 1 tsp. dill 1 tbsp. chopped parsley 3/4 - 1 c. instant mashed potatoes 1 1/4 c. chicken broth 1 1/4 c. half and half Blanch watercress for 3 minutes. Drain and puree. Saute onion and garlic in butter until soft. Add watercress puree and saute gently 2-3 minutes. Add chicken broth, dill, parsley, Natures Seasoning. Simmer 3-4 minutes. Add instant mashed potatoes and heat to boiling. Serve in heated bowls. |
