SCALLOPED EGGPLANT 
1 med. sized eggplant
Salt and pepper
1 beaten egg
2 tbsp. melted butter
1 sm. onion, finely chopped
1 c. dry bread crumbs
1/2 c. buttered bread or cracker crumbs

Pare eggplant and cut in 1 inch cubes. Cook until tender; drain thoroughly; add salt and pepper to taste. Add egg, butter, onion and bread crumbs. Mix thoroughly and place in greased baking dish. Cover with buttered crumbs and bake in 375 degree oven for about 30 minutes.
