EASY COCONUT PIE 
1/2 stick butter
30 Ritz crackers, mashed
1 (3 oz.) pkg. instant coconut pudding
1 qt. vanilla ice cream
1/2 c. milk
1 (8 oz.) Cool Whip
Coconut to taste

Melt butter and mix with Ritz crackers. Press into pie pan and chill. Blend pudding, ice cream and milk. Pour into pie shell. Top with Cool Whip and sprinkle with coconut. Keeps well in refrigerator!
