WHOLE WHEAT BANANA BREAD 
1 1/2 c. flour
1/2 c. whole wheat flour
1 tsp. baking soda
1/4 tsp. salt
1/2 c. sugar
1/4 c. vegetable oil
1 egg
1 c. mashed ripe bananas
1/3 c. nuts
1 tsp. vanilla extract
Vegetable cooking spray

Combine first four ingredients in a small bowl; stir well and set aside. Combine sugar and oil in a medium bowl; beat at medium speed of an electric mixer 2 minutes or until well blended. Add egg; beat until light and lemon colored.

With mixer running at low speed, add flour mixture alternately with bananas, beginning and ending with flour mixture. Blend well after each addition. Stir in nuts and vanilla.

Pour batter in loaf pan coated with cooking spray; bake at 350 degrees for 45 minutes. Cool 15 minutes; remove from pan and let cool completely.
