BRUNCH STRATA 
12 slices white bread
1 stick butter, softened
3 c. grated sharp Cheddar
1 1/2 c. ham or chicken or turkey, cubed
2/3 c. diced red bell pepper
2 thinly sliced scallions
3 c. milk
4 eggs, beaten
Pinch cayenne
1 tsp. dry mustard
1 tsp. salt
Paprika, garnish

Trim crusts from bread, spread with softened butter. Cut each slice into 4 strips.

Butter a 13x9 dish and layer with half bread strips, meat, cheese, pepper and scallions. Repeat layers.

Beat eggs, add seasonings and milk; pour over bread, cheese and meat layers. Refrigerate for 24 hours, covered. Allow Brunch Stratta to come to room temperature before baking. (About 1 hour out of refrigerator.)

Bake at 350 degrees for 45 minutes or until puffed and slightly browned. Sprinkle with paprika and serve. Makes 6-8 servings.
