TURKEY BREAST 
1 turkey breast (6-7 lbs.)
butter

Place turkey on a rack in big pot. Fill pot about 1/3 way up with water. Cook on low heat for about 4 hours or until done. Keep 1/3 water in pot at all times. You may need to check it fairly often to insure that the water has not cooked out.

After it is done, let it cool. Take off skin and rub with butter. Wrap in foil and put in refrigerator. Slice when cold. Take the fat off the broth after it has cooled and pour a little bit (1/2 cup or so) over turkey.
