4 c. thinly sliced raw potatoes (about 2 lbs.) 2 thinly sliced med. onions 1 tsp. salt 1/2 tsp. pepper 1/4 c. bacon fat or lard Toss potatoes, onions, and seasonings together. Heat bacon fat in a heavy skillet; add potato mixture. Cover and cook over low heat for 15 minutes; turn potatoes. Cover and cook 15 minutes more. Makes 4-6 servings. |
