TAMALE PIE 
1 (8 1/2 oz.) pkg. corn muffin mix
1 (4 oz.) pkg. shredded Cheddar cheese
1 (4 oz.) can diced green chili peppers, drained
1 lb. ground beef
1 (11 oz.) can enchilada sauce
1 (8 oz.) can red kidney beans, drained
Sour cream, optional

Prepare muffin mix according to directions. Stir in 1/2 cup of cheese and chili peppers. Spread corn muffin batter into greased 12 x 7 1/2 x 2 baking dish. Bake at 375 degrees for 10 to 12 minutes. Brown ground beef and drain. Stir in enchilada sauce and kidney beans. Spread ground beef mixture over muffin mixture. Bake for 7 more minutes top with remaining cheese and return to oven for 3 more minutes. Top with sour cream.

Makes 6 servings.
