CHERRIES IN THE SNOW DESSERT 
Preheat oven to 400°F.

Beat:

1/2 tsp. cream of tartar
1/4 tsp. salt
1 1/2 c. sugar
1 tsp. vanilla

Beat first 3 ingredients until soft peaks form. Gradually add sugar. Beat until stiff peaks form. Add vanilla. Put 6 flattened pies on a well-greased jelly roll pan. Use 2 pans.

Make 12 desserts.

Place in 400°F oven and turn off heat. Leave overnight or 6 hours.

Next day, cream:

1/2 c. sugar
1 tsp. vanilla

Add:

1 pint whipped cream
2 cups miniature marshmallows

Spread on baked meringues. Refrigerate overnight or 8 hours. Mix 1 can cherry pie filling and 1 teaspoon almond flavoring.

Serve on meringues with dab of whipped cream.
