5 MINUTE MEXICAN RICE 
2 cups instant rice (I use Minute)
2 cups hot water
1 medium red onion, diced
1 tbsp. minced garlic (optional)
2 tbsp. Mexican style chicken bouillon with tomato flavoring (Knorr)
1/4 cup oil
1 cup salsa (your favorite)
salt and pepper, to taste

Heat oil in pan. Add diced onions and rice. Stir often. After a few minutes, add in garlic. Stir constantly (so as not to burn garlic) and cook until onions are cooked and rice is lightly browned. Season with salt and pepper to taste.

Microwave water to boiling then add bouillon and mix well. Add water mixture to rice. Mix in salsa. Cover and remove from heat.

Give it 5 minutes to cool, then fluff with a fork for perfect Mexican style rice!
